What ignited your passion for cooking?

I did a lot of cooking at home growing up, I pretty much had free reign of the kitchen so that was fun. Some of my favourite memories revolve around cooking, food is something that always brings people together and that’s one thing I love about it.

What is the most exciting part of the job?

Working under intense pressure, creating new dishes and seeing what I can source locally.

Favourite dish to eat

My mum’s lasagne, she’s a really good cook!

Favourite dish to prepare

I don’t really have a favourite to be honest I like to keep it fresh and change it up and take a positive approach to everything I cook.

Ingredient you can’t live without

Salt

What is the most challenging dish you’ve ever had to prepare?

Desserts, I’m definitely a savoury cook, and sweets are something I want to develop my skills in.

Most challenging situation you’ve worked through in your career

Catering a three course meal for 7000 people in a convention centre on Hamilton Island. We had 20 Chefs on shift and ten of us worked the production line, each adding a small element to each dish, it was pretty intense!

What do you love most about the industry?

The changing food trends and the fast-paced nature of it all; the satisfaction of completing a seemingly unrealistic task.
